After enjoying some lovely Easter sunshine over the past few weeks, my thoughts have been turning to the delights of summer food. We’ve taking full advantage of the weather – with 3 BBQs so far and some fantastic Belgian waffles with fresh strawberries and blueberries, topped off with creamy English Lakes Double Jersey icecream.  The hot butterscotch sauce over the top brings the whole thing together, I had to stop myself from having two!

The warm weather is certainly affecting our guests too, with lunchtime salads proving popular.  Lets hope for a sunny summer!
