Summer BBQ Party!

On Sunday 27th of July Embleton Spa Hotel and Sporstrek Coaching are hosting our Summer BBQ party, with sports challenges, live music and a free BBQ. Tickets cost £5 for adults and £2.50 for Children, with all ticket money going to charity.

Update:  Thanks to everyone who came and enjoyed the BBQ, despite the heavy downpour!  Thanks to everyone’s generosity a total of £304.25 was raised for Embleton Youth Club.

 

Mmmm, waffles!

After enjoying some lovely Easter sunshine over the past few weeks, my thoughts have been turning to the delights of summer food. We’ve taking full advantage of the weather – with 3 BBQs so far and some fantastic Belgian waffles with fresh strawberries and blueberries, topped off with creamy English Lakes Double Jersey icecream.  The hot butterscotch sauce over the top brings the whole thing together, I had to stop myself from having two!

The warm weather is certainly affecting our guests too, with lunchtime salads proving popular.  Lets hope for a sunny summer!

A Spring in your step

A Spring in your step
At long last Spring has definitely arrived, with lambs in the fields, daffodils in full bloom and the weather has finally improved!  The fells are all drying out after the wet winter we’ve had, and the two opposite us (Sale Fell and Ling Fell) are nice and dry now – both are a very worthwhile 1-2 hour walk with great views from the top.

We’ve been busy getting everything sorted around the hotel, tidying up outside, pruning the trees and taking delivery of our new tables out on the decking.  It was fantastic to see them in use yesterday with glorious sunshine for Mothers Day.  Here’s hoping for a nice sunny few weeks…

Thanks to the team!

We have just got back from two weeks holiday, the first time we have left the hotel since taking over.  We were quite nervous to leave it and had a frantic few weeks making sure that everything was ready, trying to think of all possible eventualities. By the time we were ready to leave the team was ushering us out of the door, much like teenagers getting rid of their parents for the weekend.

With hindsight we really need not have worried. The staff continued with the work with their usual friendliness and efficiency, and took everything in their stride. Whilst we were away we were eagerly watching our email to see the comments and reviews coming in from customers, and delighted to see the rave reports:

“All the staff were friendly and attentive, the girl at the bar was great company and nothing was too much trouble for any of them. We were told that the owners were away, I can say that they had left their business in the very capable hands of lovely staff and had nothing to worry about.”

We’re back at work now and into the swing of things again.  When you live in a place like the Lake District, coming back from holiday isn’t all bad.  The sun was shining today, fairly warm despite their being snow on the hills, so everything looking beautiful.  Inca is enjoying being home too!

Merry Christmas from the team at Embleton Spa Hotel

It’s been hard work getting ready for our first Christmas at the hotel, and quite nerve wracking as I kept thinking that we had forgotten something… Fortunately it all went smoothly with plenty of food for everyone – our trio of smoked salmon and the champagne sorbet were big hits!

Fortunately the torrential rains stopped and the sun came out for the day, making it all the more special. We’ve had some delightful guests staying and various of our regular locals popped in for a drink making it a lovely relaxed day. Some guests enjoyed a walk in the sunshine, others had fun in the pool, others ate, drank and were merry 🙂

Building our menu

One of the more daunting tasks in taking on the hotel has been developing our new menu. Fortunately our fantastic chef Ellie and I have been able to draw on lots of help from regular customers, friends and our very helpful suppliers.

To start with we decided to avoid a fixed menu and offer a selection of different dishes each day, ranging from classics like Lasagne with Ciabatta garlic bread, to 8oz Cumbrian sirloins and Moroccan chicken stew. Some things went well, others less so. Despite being one of my own favorites I was surprised by the popularity of Steak and Ale pie, it quickly became a staple as we put together our day-time menu. We now serve our day menu from 12 to 6pm each day and extend it with 3 or 4 specials in the evening – you can view our day-time menu here

We’re still continuing to experiment with new dishes, both Cumberland Sausage Cassoulet and Solway Potted Shrimps (amazing!) have been triumphs recently and I’m looking forward to bringing some game into the kitchen soon – with the weather turning frosty its definitely the season for hearty stews!

New Management at Embleton Spa Hotel, Ali & Jo Dixon

After 4 weeks in the hotel I’ve finally got enough time to write my first blog post!  Its certainly been a hectic few weeks – my wife Jo, myself (Ali – ‘Alastair’ if I’m in trouble) our daughter Gracie and Inca our Labrador took over the hotel, bar and restaurant at the beginning of October.

Its been a rollercoaster ride and a lot of hard work, but great fun (mostly!).  Having not been in the hotel business before its been a steep learning curve, but lots of people have been on hand to help us.  We seem to have accomplished quite a lot too – brand new 100% Egyption cotton linen in all the rooms, thick & fluffy bath towels, new menus and new local suppliers. We’re using fresh, local produce as much as possible to create wholesome, tasty dishes, I’ll talk more about those in future posts.  There’s still lots more work to do, it feels good to be making progress!

Lastly, we’d like to say a huge thank you to everyone, staff, customers, suppliers and our neighbours who have all welcomed us so warmly into the area, helped us find our feet and kept us on the right track.

Taste Cumbria 2013 and beyond….

There’s a buzz in the area around Embleton Spa….
Could it be something to do with the forthcoming Taste Cumbria 2013 Festival next weekend? It always brings so much to the historic town of Cockermouth close to Embleton Spa Hotel, and more importantly to the whole of Cumbria.

Of course there is the income that is generated from the influx of visitors which brings a welcome boost to the economy, but it is so much more than just that.
